When Teresa Cutter‘s new book, “Healthy Baking: Cakes, Cookies, and Raw” landed on Bianca’s desk here at TrainSrilanka we spent a good hour flipping through the heavy tome, nearly drooling over every single recipe.
Page after page features delicious, wholesome, and—most importantly—easy baking recipes that anyone can take on in their own kitchen. And at nearly 500 pages, “Healthy Baking” is practically an encyclopedia of how to craft sumptuous desserts (and bread, and pastries) by using natural, organic ingredients.
One of the first recipes that caught our eye? These Salted Peanut Butter cookies—with just four ingredients, there’s no reason not to make them!
Makes 12 cookies
Peanut butter is deliciously addictive! I can eat it straight out of a jar – it’s just pure comfort food that satisfies me for hours. What I love about these cookies is that you only need a few ingredients to create pure magic.
250 g (8 oz / 1 cup) natural peanut butter
2 tablespoons raw honey or organic maple syrup
1 organic egg
1 teaspoon vanilla bean paste
70 g (2 ½ oz / ½ cup) almonds or macadamia nuts, roughly chopped
pinch of flaked sea salt
+ Notes and Inspiration Use cashew butter or almond butter in place of peanut butter for variation. For a crunchier cookie, you can add a few tablespoons of almond meal or desiccated coconut.
